Albinism (from the Latin "Albus", which signifies "white") is a hereditary deformity whereby the melanin creation is little to the point that it creates white pigmentation in the skin, hair, and eyes—an improvement which brings about what researchers like to call "creature mutants."
Yet not all white creatures are pale skinned person, obviously. A creature could be white in light of the fact that every last bit of its color delivering cells are white—as opposed to simply the melanin ones.
